The Needs of the Sophie: Aaah, Sunday!

Hello Few, it's Sophie. Evil Spock has been slacking on the entries, but he tells me he's going to step it up next week and post the second part of the Boulder, CO blog. There's also been talk of a new entry everyday for the next 5 days!

You know what Sundays are about in the Evil Spock household? Homemade blueberry pancakes from scratch and grooving to Belle and Sebastian! Ah, it must be nice living vicariously through me, but I'm going to one up that, and give you the opportunity of actually emulating the lifestyle of the feline and famous!

And of course, the recipe for the blueberry pancakes. I'm on a diet due to my condition, but I love the smell nonetheless. The recipe is courtesy of Food Network. Spocky boy just plopped fresh blueberries whilst they were on the griddle.

Buttermilk Pancakes
Recipe courtesy Elizabeth Gilroy

2 cups buttermilk
1 cup all-purpose flour
1 egg
1 teaspoon baking soda
1/2 teaspoon salt

Mix all ingredients well in small mixing bowl. Pour by spoonfuls onto hot, oiled (we use butter) griddle. Spread batter to make thin, crepe-like pancake. Cook until batter is bubbly. Turn over. Serve immediately with butter and syrup or favorite fruit sauce.

Mmm! Aunt Jemima ain't got nothing on these flapjacks! We like ours with some real maple syrup. With all the Canadians visiting recently, I'm sure they appreciate that last sentence.

Btw, I'm pretty sure Belle and Sebastian did a soundtrack for some Panda Porn. The title track was "The Blue Panda Balls are still Blue." Sounds a lot like this song . . .
